Helen and Bobby Anderson are one of Boquete's most memorable crazy couples! They are so so full of life and energy. My day is made whenever I get a chance to see her smiling face and his twinkling eyes.
I know that she is a terrific all around cook, she is not only a pro at her own Southern Style cooking but also is always talking to me about how to round out her talents with lots of ethnic flavors and techniques. Lets not forget to mention that Bobby is an amazing BBQer!
Here is her recipe for Ginger-Soy Marinated Ahi Tuna Steaks. I am sure that it would be great on the outside grill as well. Enjoy and Thank you Helen!
If you are having a hard time finding fish, here is Miguel the fish guy's cell number 6890-5394. He travels around Boquete several days a week vending his fresh fish from Pedregal.
2 Tablespoons low-sodium soy sauce, divided
4 6-oz tuna steaks (1” thick)
2 Tablespoons Candice’s ginger syrup
2 Teaspoons wasabi paste
Cooking spray
2 Tablespoons chopped cilantro
Spoon 1 T soy sauce over fish; let stand 5 minutes.
Combine remaining 1 T soy sauce, ginger syrup and wasabi and stir.
Heat grill pan over medium-high heat.
Coat pan with cooking spray.
Add fish to pan; cook 2 minutes on each side.
Spoon ginger/wasabi mixture over tuna.
Cook 1 minute or until medium-rare or until desired degree of doneness.
Remove tuna from pan and sprinkle with fresh cilantro.
